Sausage and Spinach Creamy Soup - Slow Cooker Recipe

"Well I had a recipe, but I didn't have all the ingredients.... so I improvised."  I have to tell you this happens more times than not at my home.  I don't go shopping to get items for recipes.  I shop for things I like.  We always have staple items and a few items that were on sale when I bought them.

Today I pulled out sausage from the freezer, having an idea that I would make an apple, onion and sausage dish I always make, except we have no onions.  Ok, off to the web to find a recipe.  I don't even know what the recipe was for, but I didn't have everything (typical) and I ended up subbing and adding, and I got this fab soup that was supposed to be a hearty sauce for rice.  It's all good.  This was spectacular.

So here is the recipe for you to enjoy:
1 package (~13 oz) of smoked sausage cut into small pieces
1 cup of fresh spinach
1 can of sliced carrots
1 can of chicken with rice condensed soup (I know you think I am crazy now)
1 can of water
1 8 ounce package of cream cheese
1 tablespoon of minced garlic.

Place all of the ingredients into your slow cooker (liquids first) and cook on low for about 4 to 6 hours, stirring often in the beginning, to ensure the cream cheese mixes in.

We served our soup with a delicious homemade red wine bread.  YUMMY.

Enjoy!

  1. Okay, what is red wine bread?! (red wine and bread?) If there is a red wine bread I need to know, lol.
Also I do the same - if I don't have all of the ingredients, I improvise. I usually make meatloaf/meatballs without an egg because I don't usually keep eggs in the house - I've found that breadcrumbs work just as well.

    1. Red Wine bread is another improv recipe, it called for white wine, which we didn't have, but we had this nasty red wine that no one liked, so I threw that in instead. The wine flavor was much better in the bread:) I will see if I can find the recipe again in the book.

  2. Ha! I also wondered what red wine bread is - LOL! This sounds super yummy. I love taking random ingredients I have and plugging them into the AllRecipes.com app/website to see what I can make. So fun!

  5. That looks really good! My style of cooking is taking whatever I have on hand and throwing them altogether for a quick dinner.
