If you are following my low-carb journey, I know you are so excited for these weekly recipes! Here is the amazing-ness I have to share today.... Pad Thai!
It's gluten free, soy free, low-carb, sugar free and non-gmo!
2 bags of NoOodles (zero carb noodles!) This variety pack is a steal and also gives you pasta noodles and rice for about $2 per bag!
1/4 cup of Fresh Cilantro
3 green onions
2 large eggs
3 medium sized chicken thighs, boneless/skinless
4tbsp of coconut oil
4oz of mung bean sprouts
4tbsp of peanuts, chopped up and unsalted
1.5tbsp of ketchup
1/2tsp worcestershire sauce
3tbsp of raw coconut aminos or fish sauce
1tbsp of pepper sauce/hot sauce
1.5tsp of fresh minced garlic (powder will do)
1.5tbsp of peanut butter/almond butter/cashew butter
1tsp of white vinegar
7 drops of liquid stevia
Girl, get your apron on.... and sing your favorite song!
Drain noodles and pat them dry
Cut chicken into cubes
Cook the chicken in the coconut oil
Chop green onion and cilantro
-remove chicken from pan
Fry the noodles until brown/firm in the same pan, add more oil if needed
-reduce heat in pan
Add eggs and scramble into noodles
Add the chicken, sauce and half of the cilantro into the pan and simmer for 10 minutes
Add peanuts, cilantro and green onion to garnish.
Serve with bean sprouts.
Finally, dance around the kitchen like the goddess you are and enjoy!
