This blueberry banana bread is: Gluten Free, Dairy Free, Low-Carb and Sugar-Free!
2 very ripe bananas
2 tbsp oil (coconut works well!)
1.5c of room temperature water
1/2 cup of raw stevia powder
2c of almond flour
1tsp of aluminum-free baking powder
Pinch of salt
*Do not include in blender: Optional: 1/2c of blueberries or walnuts (or a mix of both)
Add all ingredients (except for optional blueberries/walnuts) to a blender and mix on low for 1-2 minutes until smooth. Fold in walnuts/blueberries and pour into a baking dish. Bake at 350 for 40-45 minutes or until toothpick comes out clean.
Nutrition Info if prepared without blueberries/walnuts:
6g net carbs per slice (2 grams of fiber already subtracted), 6g protein and approx 150 calories (give or take depending on the oil you choose). Add 8g carbs per loaf for the blueberries and 2g per loaf for the walnuts. Each loaf should yield 9 slices.
