Amazing Low Carb Pancakes! #GlutenFree #Recipe #LowCarb


Well, hello there :) 

I know you've been searching for the perfect almond flour pancake recipe.....
and I am happy to tell you that you've found it!

They're fluffier, easy to flip and have a rich buttery flavor.  Mmmmm, delish!

(Not to mention they are gluten free and very low carb!)

Here is my recipe:

Ingredients

2 cups of almond flour
1/4 cup of coconut oil, melted
1/4 cup of water
2tbsp of melted butter or ghee
3 eggs, beaten together before added to blender
1tbsp of aluminum free baking powder
1/2tbsp of vanilla extract

Mix ingredients together in a food processor or mixer, like the Ninja - until it's thin and easy to pour. Some almond flours are drier than others, so if your mix is too thick - add more coconut oil to thin.  



Pour into a non-stick griddle and cook on low (3-4) until bubbles pop up in the middle.  You can even sprinkle some sugar-free chocolate chips inside.


Flip and finish cooking.  Viola!  It's that easy.  This recipe makes 6-8 pancakes.  These will not stay together for leftovers.  Once cold, they crumble.  So, only make enough to serve!  If you need to double up this recipe, make it in two separate batches.

Top with butter or sugar-free syrup!
