This recipe can be served warm or cold. I made/served it cold, however it also tastes great warm as well!
1 Box of whole wheat shell pasta cooked, drained
2 wedges of brie cheese, cut into small pieces (it's easier if you freeze it for 20 minutes, makes the rind easier to peel)
3 cups Heirloom Tomatoes cut into pieces
1 small zucchini cut
1 cup of olive oil (if watching calories try 3/4 cup)
1 cup fresh basil leaves cut
Fresh garlic to taste (I used 8 small cloves)
Salt & Pepper to taste
Combine everything except pasta & brie, mix well, then add in pasta, mix. If serving cold, let sit in fridge 2 hours, add brie & serve. If you are serving warm, just mix everything together and serve. The brie will melt with the warm pasta. If you want, you could also add extra veggies like colored peppers or onions. Enjoy!
