Hudsonville Ice Cream Sandwich Recipe

Growing up some of my favorite summer memories are of my family (grandparents, aunts, uncles, cousins, parents, and friends) gathered around the campfire at our cottage “Up North” or swimming at  one of the many beautiful lakes of Michigan.  And what is a campfire without the pudgie pies and smores?

Hudsonville Ice Cream introduced a limited-edition flavor to bring back the memories of summer campfires, family, good friends and the perfection of the combination of flavors in smores.  Winter Campfire recreates the gooey treat by using marshmallow flavored ice cream, graham cracker pieces and a thick chocolate swirl.  My whole family agrees this is one of our newest favorite flavors.

Fun and Easy Ice Cream Sandwich Recipe

We used their new flavor to make an easy and fun ice cream sandwich.  We used Nestle Toll House Triple Chip Cookie Dough (you can find it in the refrigerator section) and Hudsonville Winter Campfire Ice Cream (substitute your favorite flavor).

Directions:
1.  Simply follow the directions on the cookie package, making sure you cook them exactly as long as the directions state.  When you pull them out of the over, they will seem like they are not done, but they will cook a little more as they cool off.

2.  Let the cookies cool completely.  If you want to speed up the process, you can place them in the freezer or fridge.  We let ours cool overnight.

3.  Scoop about 1/3 cup of ice cream onto a cookie, then place another cookie on top and press down.

4.  You can pre-make the cookie sandwiches and store them in the freezer (in a bag) or make them on demand.
5.  Enjoy!
